Around the House…
I bought an Insta Pot 6-in-1 Programmable Pressure Cooker. It arrived late Friday morning–I have used it three times already. In other news, I think we will start our new school year next Monday…and all the children said, “Amen.”
In the Kitchen…
Friday I made Lentil Rice Casserole in my new Insta Pot…yum!
2c rice
2.5c water
Cook for 4 minutes then add: (but be careful opening the Inst Pot or you’ll get a steam burn on your forearm–just sayin’)
2c dry lentils
8c chicken or vegetable broth
2 very rounded tablespoons chili powder
2 teaspoons cumin
1 rounded tablespoon onion powder or dried minced onion
1 teaspoon garlic powder
Cook for around 22 minutes. Serve with shredded cheese, salsa and tortilla chips. This is one of my favorite Friday meals.
Our Domestic Church…
Today is the Feast of the Assumption of Mary. Luke serves Mass today and maybe I’ll make a sweet treat–something white with blue? White cake with blueberries?
Saving Money…
You guys, I thought once we paid off our house we’d have all this “free” money. In reality, I realized we were robbing our Emergency Fund pretty regularly, which means there is no “free” money floating around. As a matter of fact, I’m having to budget even more now. We’ve had a couple of big expenses hit us this month: life insurance premiums for Chris and I both due this month, ordering school books, a hospital bill from a procedure Chris had done months ago, I ordered two Christmas gifts (Kindle Paperwhites) when they were on crazy sale for Amazon’s Prime Day, plus a necessary new computer for school.

Isn’t today the Assumption? Immaculate Conception is Dec. 8! I cannot wait to purchase the Sirach Study!!!

Thank you for catching that! I was picturing the Assumption but thinking about Mary’s words, “I am the Immaculate Conception.”
