I’m keeping a running list of thanksgiving–30 Days of Thanksgiving to be exact–for the month of November. I’m forcing myself to remember Thanksgiving is a choice, a way of thinking and a way of life. 30 Days of Thanksgiving
106. Amazon–I know we all love local shops, but being able to do almost all my Christmas shopping, in one place, without having to be a part of any crowd whatsoever, is extremely important to this semi recluse/wannabe hermit/introvert.
107. Hummus (I think I’ve listed it before, but C’mon–Hummus)
108. Goodwill shopping or as we call it, GW Boutique. I love shopping at the GW Boutique because I can score some awesome books, shoes and clothes at a quarter of the cost anywhere else. I do dislike the crowds though–see #106.
109. Hunting Season–I do not hunt nor do I want to hunt, but it is a part of who my man is and it makes him happy.
110. Children who forgive me when I’ve messed up.
111. Reading Billowtail to my children during lunch. We are enjoying this book so much. I don’t always tell you to go buy the books I read, but you must buy this one.
112. Angela Pea–such a sweet friend to point out the misspelling in my lovely Daily Affirmations for Self Esteem printable. All fixed now–print away!
113. Cold and windy soccer fields. Standing or sitting on them means I’m alive and healthy and so are my children.
114. A phone that can take pictures, give me directions and make phone calls–who would have thought 10, 15 or even 5 years ago? and it’s waterproof!
115. Dark Chocolate (I think I’ve listed it before, but C’mon–dark chocolate)
116. A new appreciation for Military wives and single parents
117. Sweet encouraging emails–y’all know who you are. Thank you.
118. Luke making “Curly Hot Dogs” in the microwave–I try not to judge

Mass (simply getting there) and most importantly, Jesus in the Eucharist. I’m grateful for confession and direction afterward, as well as talking to a dear friend for more spiritual support this afternoon.
This morning, I felt like I was on the edge of a precipice. Now, I’m feeling much better. I’m ready to go back to work here.

Beautiful weather.
Clean floors. Mostly.

Homeschool laws changing for the better in PA. We live in Jersey, but it expands our options for retirement. We love Pennsylvania.

Homemade chicken stock in the fridge and freezer.

The best thing for me is controlling my blood sugar and my lifelong addiction to said sugar. As far as weight goes, I mostly have a gut and it doesn’t respond well to wheat products unless they are sprouted. I still eat it, but I try limiting it to Joseph’s and sourdough if I’m able.
Some of what I love:
Fage yogurt with strawberries.
So far: ANYTHING by Briana Thomas!
Basic cheesecake.
Cauliflower mashed photatoes.
Peanut butter & chocolate shakes.
Last night we had meat chunks and mashed photatoes (THM Facebook page). I still laugh when I say or hear meat chunks, but it was really good. I used beef stock instead of bouillon and thickened it with some glucci at the end. Talk about comfort food on a chilly night.
So, I’m still tweaking and learning ~ and especially my balance between S and E ~ all while paying attention to how my body responds to certain foods. I don’t get too upset about the attention to detail because I figure that is always required when we set out to do something hard, but worth doing.

I am so deeply grateful for all that God has given me today.
I am thankful for the talk I attended today on the link between the way we live and the environment.
I am especially grateful that I now feel so challenged…I have to look carefully at the way I live – and live more simply.
